But really, here's the thing (did I mention this last year?):
Australians eat their gingerbread houses. How wrong is that?
I actually tried my gables (how often can you say that?) and was amazed to realize they were kind of chewy.
Kind of chewy! I'd never had gingerbread that wasn't stale, unless of course you mean real, homemade gingerbread which is very different and one of my all-time top ten favorite desserts.

Not that I've ever made gingerbread, let alone a gingerbread house, but what do you do with them if you don't eat them? Think they look pretty until they go mouldy, whereupon you toss them in the bin?
And it's very cute - nice to see the use of Mint Leaves in there. :-)
Oh, I want to make a gingerbread house. Thanks for the idea and reminder how much fun it can be.
My reply is that actually, they don't go moldy due to the particular type of gingerbread they are made of - dry and hard. Dusty, maybe. They can last for years, unless the mice find them in storage.
