Kangaroo and emu. Kangaroo I understand. Emu I don't. Have you ever met an emu?!

Maybe the emu is the national bird, whereas the kangaroo is the national furry animal??
It would be enought to say that Australia is represented by the Kangaroo and the Emu because all three are unique and bizarre, but funnily enough there is a deeper symbolism at work here.
Due to their musculo-skeletal systems, neither the kangaroo nor the emu can walk backwards; they just have to keep going forwards. Much like the great nation they represent.
They're both also really fast, and can make a real nuissance of themselves if they have a mind to.
