AKA abilities/strengths. As in, "he's got chops." Or, "watch what you say around Kim or she'll immortalize every blemish in your character -- and she's got chops at that."

That may be a term specific to the Lower North Shore of Sydney. I have no idea what you're talking about.
Chops are cuts of meat, best enjoyed pan fried or barbequed.
That was all Steve Kryger ... maybe it's a Canberra thing??
To an American, they're also lips -- as in at band camp, "save your chops this morning, we're going to be playing for 2 hours this afternoon, too."
and we cannot forget about "busting" ones chops.
Freaking Canberra weirdoes.
I think the chops on one's face are actually cheeks (which would also explain the advice to woodwind/brass players at band camp). I have images of crazy old floral dress-clad aunts leaning in and asking "Who's a little cheeky chops?" before answering their own question by saying "You are" and pinching and shaking some poor child's cheeks.
Or maybe that's just me.
